This Peruvian bean comes to us from central Peru, specifically the Chanchamayo region. The coffee is produced by local smallholder farmers who deliver their harvested cherry to central mills for processing and sale. Part of this process involves machines that sort out defects and perform a cleaning stage the Machine Cleaned Mejorado (MCM) process which results in a more consistent final product. The HB designation stands for Hard Bean, referring to coffees grown above 1,200 meters above sea level. Hard Bean is also used interchangeably with HG, or High Grown.
